Healthy Shepherds Pie

Ingredients
For the Filling
- 1 lb ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 3 medium carrots, diced
- 3 celery ribs, diced
- 1 cup frozen peas
- 1 cup diced mushrooms (optional)
- 1 tbsp tomato paste
- 1 cup beef bone broth
- 1 tsp Worcestershire sauce (gluten free)
- 1 tsp dried thyme
- 1 tsp dried rosemary
- salt and pepper to taste
- 1 tbsp arrowroot powder or gluten free flour (for thickening)
For the Mashed Potato Topping
- 2 lbs Yukon gold or Russet potatoes, peeled and cubed
- 2 whole garlic cloves, peeled
- 3/4 cup hand shredded raw cheddar cheese (divide- 1/2 cup to mix with potatoes and 1/4 cup to sprinkle on top)
- 3 tbsp grass fed butter
- 1/2 cup unsweetened almond milk (or milk of choice)
- salt and pepper to taste
Instructions
Filling
- Preheat oven to 400 degrees F. (Tip- start boiling your potatoes right away, timing should work out to mix them while your filling is simmering).
- Heat a large skillet over medium heat. Add the ground meat and cook until browned, breaking it into small pieces. Season with salt and pepper. Remove from the skillet and set aside.
- In the same skillet, sauté the onion, celery, and carrots until softened, about 5 minutes. Add mushrooms (if using) and garlic. Cook for another 3 minutes.
- Stir in the tomato paste, thyme, and rosemary. Cook for 1 minute, then add the broth, Worcestershire sauce, and cooked meat.
- Simmer for 10 minutes, allowing the flavors to combine. Stir in the peas and arrowroot powder to thicken the mixture.
Cheesy Garlic Mashed Potato Topping
- Boil the potatoes and garlic cloves in salted water until fork-tender, about 15 minutes. Drain well.
- Mash the potatoes and garlic with 1/2 cup shredded cheese, butter, milk, salt, and pepper until smooth and creamy.
- Spread the meat filling evenly in a baking dish.
- Top with the mashed potatoes, spreading evenly (an offset icing knife works great). Sprinkle remaining 1/4 cup cheese on top.
- Bake for 20–25 minutes, or until the top is golden and bubbling.
