Warm Winter Sausage and Butternut Squash Kale Salad
Made entirely from the leftovers of the Unstuffed Butternut Squash and Sausage Bowls
Ingredients
- leftover butternut squash and brussel sprouts from previous recipe
- leftover sausage mixture from previous recipe
- the other half of the head of kale you didn’t use up from yesterday
- olive oil
- goat cheese
- 2 cooked beets
- pomegranate seeds
Instructions
- Cut up your kale into bite size pieces and massage with a drizzle of olive oil. This step is important because massaging the kale gets it to a nice texture- eating dry kale can be a little unappealing. Place onto plates.
- Sprinkle goat cheese on top of your kale. I love to do this step before putting anything else on. When the warm ingredients get put on top, the goat cheese will melt so nicely into your salad- making it even more decadent.
- Cook beets- I boiled mine until tender.
- Heat up the butternut squash leftovers from my previous recipe, and the sausage mixture from my previous recipe.
- Place all warm ingredients on top of salad and sprinkle with pomegranate seeds. I don’t even use dressing because it is so flavorful!
