Strawberry Coconut Chocolate Hearts

A fun, guilt free treat that's tasty and fun to make!

Ingredients

For the Strawberry Layer
  • 16 oz fresh strawberries
  • ½ cup unsweetened shredded coconut
  • 2 tbsp coconut oil, melted
  • 1-2 tbsp maple syrup (adjust for sweetness)
For the Chocolate Coating
  • 1 cup dark chocolate chips (70%+ cacao)
  • 2 tsp coconut oil

Instructions

  1. Blend strawberries, shredded coconut, coconut oil, and maple syrup in a food processor until smooth.
  2. Spoon the mixture into silicone heart-shaped molds, filling halfway. Freeze for 30 minutes.
  3. In a heatproof bowl, melt dark chocolate chips and coconut oil using a double boiler or microwave in 20-second intervals, stirring until smooth.
  4. Remove the molds from the freezer. Pour melted chocolate over the strawberry layer, filling the molds completely.
  5. Gently tap the mold to remove air bubbles. Freeze for another hour until solid.
  6. Pop the hearts out of the molds and enjoy chilled!
