Paleo Birthday Cake Bites
Naturally sweetened, grain free and that classic cake flavor packed into little bites. The perfect guilt free sweet treat.
Ingredients
- 1 cup almond flour
- ¼ cup coconut flour
- ¼ cup cashew butter (or almond butter)
- ¼ cup maple syrup or honey
- 1 teaspoon vanilla extract
- ½ teaspoon almond extract (for that classic cake flavor)
- ¼ teaspoon sea salt
- 2 tablespoons coconut oil, melted
- 2 tablespoons unsweetened coconut milk (or almond milk)
- 2 tablespoons naturally colored sprinkles
Optional "white chocolate" drizzle
- ¼ cup coconut butter, melted
- 1 teaspoon maple syrup
- ½ teaspoon vanilla extract
Instructions
- In a medium bowl, mix together the almond flour, coconut flour, and salt.
- Stir in the cashew butter, maple syrup, vanilla extract, almond extract, and melted coconut oil until a thick dough forms.
- Add the coconut milk a little at a time until the dough is soft and moldable.
- Roll the dough into small bite-sized balls and place them on a parchment-lined plate or tray.
- (Optional) Drizzle with melted coconut butter mixture for a fun frosting-like effect. If the drizzle becomes too thick or hard, heat it in the microwave for 10-20 seconds. Sprinkle with dye free sprinkles.
- Refrigerate for 30 minutes until firm.
- Enjoy! Store leftovers in an airtight container in the fridge for up to a week.
