Peanut Butter and Jelly Yogurt Bark
A fun, protein-packed snack made with simple, whole food ingredients. It’s creamy, fruity, and perfect for a refreshing treat that both kids and adults will love.
Ingredients
- 1 ½ cups full-fat Greek yogurt (or dairy-free yogurt for a paleo version)
- 2 tablespoons maple syrup or honey
- ½ teaspoon vanilla extract
- ¼ cup peanut, almond or cashew butter
- ¼ cup chia seed jam (recipe below or use store-bought)
- 2 tablespoons crushed freeze-dried strawberries or raspberries (for crunch + color)
Quick Chia Jam
- 6 oz berries, mashed (strawberries, raspberries, or blueberries)
- 1 tablespoon chia seeds
- 1 teaspoon maple syrup
- 1 tablespoon water
Instructions
- Line a baking sheet with parchment paper.
- Mix all chia jam ingredients and let sit for 10 minutes until thickened.
- In a bowl, mix yogurt, maple syrup, and vanilla. Spread evenly on the parchment.
- Drizzle peanut butter and chia jam over the yogurt, then use a knife or toothpick to swirl for a fun, marbled effect.
- Sprinkle with freeze-dried berries.
- Freeze for 3-4 hours until solid, then break into pieces.
- Enjoy immediately or store in an airtight container in the freezer.
