Ingredients

  • 1 ½ cups full-fat Greek yogurt (or dairy-free yogurt for a paleo version)
  • 2 tablespoons maple syrup or honey
  • ½ teaspoon vanilla extract
  • ¼ cup peanut, almond or cashew butter
  • ¼ cup chia seed jam (recipe below or use store-bought)
  • 2 tablespoons crushed freeze-dried strawberries or raspberries (for crunch + color)
Quick Chia Jam
  • 6 oz berries, mashed (strawberries, raspberries, or blueberries)
  • 1 tablespoon chia seeds
  • 1 teaspoon maple syrup
  • 1 tablespoon water

Instructions

  1. Line a baking sheet with parchment paper.
  2. Mix all chia jam ingredients and let sit for 10 minutes until thickened.
  3. In a bowl, mix yogurt, maple syrup, and vanilla. Spread evenly on the parchment.
  4. Drizzle peanut butter and chia jam over the yogurt, then use a knife or toothpick to swirl for a fun, marbled effect.
  5. Sprinkle with freeze-dried berries.
  6. Freeze for 3-4 hours until solid, then break into pieces.
  7. Enjoy immediately or store in an airtight container in the freezer.
