One-Skillet Ground Turkey Sweet Potato Hash

It’s cozy, healthy, and made with all the perfect January seasonal produce. Packed with protein, veggies, and warming flavors

Ingredients

  • 1 lb ground turkey (lean or regular)
  • 2 medium sweet potatoes, peeled and diced into ½-inch cubes
  • 1 small red onion, diced
  • 1 bell pepper (red or yellow), diced
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • ½ tsp chili flakes (optional, for heat)
  • 1 tsp dried oregano
  • Salt and black pepper, to taste
  • 2 tbsp olive oil or avocado oil
  • 2 cups fresh spinach or kale, chopped
  • 2 green onions, sliced (for garnish)
Optional Toppings
  • 1 avocado, diced
  • Fried/poached/hard boiled eggs
  • Hot sauce or a drizzle of tahini

Instructions

  1. Heat 1 tbsp of oil in a large skillet over medium heat. Add the diced sweet potatoes, season with a pinch of salt, and sauté for 8-10 minutes, stirring occasionally, until they’re tender and lightly golden. Move the potatoes to the outer edges of the skillet.
  2. In the same skillet, add the remaining oil. Add the ground turkey and cook for 5-7 minutes, breaking it up with a wooden spoon, until browned.
  3. Stir in smoked paprika, cumin, chili flakes (if using), oregano, salt, and pepper. Mix well.
  4. Add the onion, bell pepper, and garlic to the turkey. Sauté for 3-4 minutes until softened.
  5. Add the spinach or kale and cook for 1-2 minutes, until wilted.
  6. Top with green onions and optional toppings like avocado or eggs
