Ingredients
- 1 lb ground turkey (lean or regular)
- 2 medium sweet potatoes, peeled and diced into ½-inch cubes
- 1 small red onion, diced
- 1 bell pepper (red or yellow), diced
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- 1 tsp ground cumin
- ½ tsp chili flakes (optional, for heat)
- 1 tsp dried oregano
- Salt and black pepper, to taste
- 2 tbsp olive oil or avocado oil
- 2 cups fresh spinach or kale, chopped
- 2 green onions, sliced (for garnish)
Optional Toppings
- 1 avocado, diced
- Fried/poached/hard boiled eggs
- Hot sauce or a drizzle of tahini
Instructions
- Heat 1 tbsp of oil in a large skillet over medium heat. Add the diced sweet potatoes, season with a pinch of salt, and sauté for 8-10 minutes, stirring occasionally, until they’re tender and lightly golden. Move the potatoes to the outer edges of the skillet.
- In the same skillet, add the remaining oil. Add the ground turkey and cook for 5-7 minutes, breaking it up with a wooden spoon, until browned.
- Stir in smoked paprika, cumin, chili flakes (if using), oregano, salt, and pepper. Mix well.
- Add the onion, bell pepper, and garlic to the turkey. Sauté for 3-4 minutes until softened.
- Add the spinach or kale and cook for 1-2 minutes, until wilted.
- Top with green onions and optional toppings like avocado or eggs
