Beef Stroganoff

GF/DF Beef Stroganoff

A decadent version of a classic favorite. Made gluten-free and dairy-free with purposeful and flavorful ingredients.

Ingredients

  • 1 lb thinly sliced grass-fed beef
  • 1 tbsp olive oil or avocado oil
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 16 oz mushrooms, sliced
  • 1 cup full-fat coconut milk (or cashew cream for creaminess)
  • 1 cup beef bone broth
  • 2 tbsp gluten-free liquid or coconut aminos
  • 1 tbsp Dijon mustard
  • 1 tsp paprika
  • salt and pepper to taste
  • 1 tbsp arrowroot powder or tapioca starch mixed with 2 tbsp water (optional, for thickening)
  • Gluten-free pasta or zucchini noodles
  • Fresh parsley, chopped (for garnish)
  • green vegetable of choice

Instructions

  1. Heat oil in a large skillet over medium heat. Add sliced beef and season with salt and pepper. Cook until browned. Remove and set aside.
  2. In the same skillet, sauté onions until softened. Add garlic and cook for one minute. Add mushrooms and cook until tender.
  3. Add coconut milk, beef broth, tamari, Dijon mustard, paprika, salt, and pepper. Stir to combine.
  4. If a thicker sauce is desired, stir in the arrowroot powder mixture and cook until the sauce thickens.
  5. Add the cooked beef back into the skillet and let simmer for 5 minutes. Adjust seasoning if needed.
  6. Serve over your choice of pasta or zucchini noodles, with a green vegetable on the side and garnish with fresh parsley.
