Sweet and Spicy Chicken Bowls
A protein packed and fiber fueled bowl that is quick and easy to throw together. Despite the ease of the recipe, the flavor delivers!
Ingredients
For the Chicken
- 1 lb chicken breast or thighs, cut into bite-sized pieces
- 2 tbsp liquid or coconut aminos
- 1 tbsp honey or pure maple syrup
- 1 tbsp sriracha (adjust for spice level)
- 1 tsp grated fresh ginger
- 2 cloves garlic, minced
- 1 tbsp avocado oil
For the Bowl Base
- 2 cups cooked quinoa or wild rice
- 1 cup steamed broccoli florets
- 1 cup steamed cauliflower
- 1 cup sliced carrots
- 1 red bell pepper, thinly sliced
- 1 avocado, sliced
For the Sweet and Spicy Sauce
- 3 tbsp coconut aminos
- 2 tbsp honey or pure maple syrup
- 1 tsp sriracha
- 1 tbsp fresh lime juice
- 1 tsp sesame oil (optional)
Toppings (Optional)
- Sesame seeds
- Chopped green onions
- Fresh cilantro
Instructions
- In a small bowl, whisk together all sauce ingredients. Set aside.
- Heat the avocado oil in a large skillet over medium heat. Add the chicken, ginger, and garlic, and sauté for 5-7 minutes until the chicken is cooked through. Pour half the sauce over the chicken and cook for another 2-3 minutes, allowing the sauce to caramelize slightly.
- steam broccoli, cauliflower and carrots together.
- Divide the quinoa or wild rice among bowls. Top with chicken, broccoli, carrots, red bell pepper, and avocado slices.
- Drizzle the remaining sauce over the bowls.
- Garnish with sesame seeds, green onions, and cilantro, if desired.
