Sweet and Spicy Chicken Bowls

A protein packed and fiber fueled bowl that is quick and easy to throw together. Despite the ease of the recipe, the flavor delivers!

Ingredients

For the Chicken
  • 1 lb chicken breast or thighs, cut into bite-sized pieces
  • 2 tbsp liquid or coconut aminos
  • 1 tbsp honey or pure maple syrup
  • 1 tbsp sriracha (adjust for spice level)
  • 1 tsp grated fresh ginger
  • 2 cloves garlic, minced
  • 1 tbsp avocado oil
For the Bowl Base
  • 2 cups cooked quinoa or wild rice
  • 1 cup steamed broccoli florets
  • 1 cup steamed cauliflower
  • 1 cup sliced carrots
  • 1 red bell pepper, thinly sliced
  • 1 avocado, sliced
For the Sweet and Spicy Sauce
  • 3 tbsp coconut aminos
  • 2 tbsp honey or pure maple syrup
  • 1 tsp sriracha
  • 1 tbsp fresh lime juice
  • 1 tsp sesame oil (optional)
Toppings (Optional)
  • Sesame seeds
  • Chopped green onions
  • Fresh cilantro

Instructions

  1. In a small bowl, whisk together all sauce ingredients. Set aside.
  2. Heat the avocado oil in a large skillet over medium heat. Add the chicken, ginger, and garlic, and sauté for 5-7 minutes until the chicken is cooked through. Pour half the sauce over the chicken and cook for another 2-3 minutes, allowing the sauce to caramelize slightly.
  3. steam broccoli, cauliflower and carrots together.
  4. Divide the quinoa or wild rice among bowls. Top with chicken, broccoli, carrots, red bell pepper, and avocado slices.
  5. Drizzle the remaining sauce over the bowls.
  6. Garnish with sesame seeds, green onions, and cilantro, if desired.
