Ingredients
Salad
- spinach
- leftover pepper stuffing from yesterdays recipe (https://www.kysiacookswell.com/new-page-1-2-2-1-1-1-1-1-2)
Avocado Ranch
- 1/4 cup coconut milk
- 2 tbsp avocado mayo
- 1 small bunch cilantro
- Juice of 1 lime
- 1 avocado, peeled and pitted
- 2 tbsp fresh dill
- 1 tbsp garlic powder
- Salt and pepper to taste
- 1 tbsp apple cider vinegar
Instructions
- Combine all dressing ingredients in a food processor. Serve on top of spinach and stuffing mixture.
