A completely hassle free dinner that’s ready in 20 minutes or less! It has flavorful lean meat, crisp veggies and a savory sauce that all comes together in one pan. Can be served with or without rice.
Ingredients
- 1 lb ground turkey, chicken, or pork
- 3 cups coleslaw mix (or however much you have)
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 3 tbsp liquid or coconut aminos
- 1 tbsp rice vinegar
- 1/2 tsp chili flakes (optional, for heat)
- 2 green onions, sliced
- 1 tbsp sesame seeds (optional, for garnish)
- prepared rice or cauliflower rice (optional, for more substance)
Instructions
- Heat the oil in a large skillet over medium heat. Add the ground meat and cook until browned, breaking it into crumbles.
- Stir in the garlic and ginger, cooking for 1–2 minutes until fragrant.
- Toss in the coleslaw mix and cook, stirring frequently, for 3–5 minutes until softened but still slightly crunchy.
- Stir in the coconut aminos, rice vinegar, and chili flakes (if using). Cook for another 1–2 minutes to let the flavors meld.
- Top with sliced green onions and sesame seeds. Serve hot as is, or over cauliflower rice for a more filling meal.
