Egg Roll in a Bowl

A completely hassle free dinner that’s ready in 20 minutes or less! It has flavorful lean meat, crisp veggies and a savory sauce that all comes together in one pan. Can be served with or without rice.

Ingredients

  • 1 lb ground turkey, chicken, or pork
  • 3 cups coleslaw mix (or however much you have)
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 3 tbsp liquid or coconut aminos
  • 1 tbsp rice vinegar
  • 1/2 tsp chili flakes (optional, for heat)
  • 2 green onions, sliced
  • 1 tbsp sesame seeds (optional, for garnish)
  • prepared rice or cauliflower rice (optional, for more substance)

Instructions

  1. Heat the oil in a large skillet over medium heat. Add the ground meat and cook until browned, breaking it into crumbles.
  2. Stir in the garlic and ginger, cooking for 1–2 minutes until fragrant.
  3. Toss in the coleslaw mix and cook, stirring frequently, for 3–5 minutes until softened but still slightly crunchy.
  4. Stir in the coconut aminos, rice vinegar, and chili flakes (if using). Cook for another 1–2 minutes to let the flavors meld.
  5. Top with sliced green onions and sesame seeds. Serve hot as is, or over cauliflower rice for a more filling meal.
