Ginger Garlic Pork Bowls

Savory, protein-packed ground pork meets crisp veggies and tender bok choy for a meal that’s fresh, flavorful and gut-friendly.


Ingredients

For the Pork
  • 1 lb ground pork (pasture-raised if possible)
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 2 tbsp liquid or coconut aminos
  • 1 tbsp sesame oil
  • 1 tbsp honey or pure maple syrup
  • 1 tbsp rice vinegar
  • 1 tsp chili garlic sauce or sriracha (adjust for spice level)
For the Bowl Base
  • 2 cups cooked white rice (or cauliflower rice)
  • 1 cup steamed or sautéed bok choy
  • 1 cup shredded carrots
  • 1 cucumber, sliced into thin matchsticks
  • 1 avocado, sliced
Garnishes
  • 1 tbsp toasted sesame seeds
  • 2 green onions, sliced
  • Fresh cilantro

Instructions

  1. Heat a skillet over medium heat and add sesame oil. Add the ground pork and cook for 5-7 minutes, breaking it up into small pieces, until browned.
  2. Stir in garlic and ginger and cook for 1-2 minutes until fragrant.
  3. In a small bowl, mix coconut aminos, honey, rice vinegar, and chili garlic sauce.
  4. Pour the sauce over the pork and cook for another 2-3 minutes, letting it caramelize slightly.
  5. Divide the rice (or cauliflower rice). Top with bok choy, shredded carrots, cucumber, and avocado slices. Spoon the ground pork mixture over the bowls. Garnish with sesame seeds, green onions, and cilantro.
