- 1 jalapeño, seeded and diced (optional, for heat)
- 2 tbsp chili powder
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1/2 tsp oregano
- 1/4 tsp cayenne pepper (optional)
- 1 (14 oz) can fire-roasted diced tomatoes
- 1 (8 oz) can tomato sauce
- 1 cup beef bone broth
- 1 (15 oz) can black beans, rinsed and drained
- 1 (15 oz) can kidney beans, rinsed and drained
- 1/4 cup masa harina (corn flour)
- 1/2 cup water
- Salt and pepper, to taste
- Juice of 1 lime
Optional Toppings
- Fresh cilantro
- shredded cheese
- diced onion
- sour cream or thick Greek yogurt
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion, bell pepper, and jalapeño (if using). Sauté until softened, about 4-5 minutes. Add garlic and cook one more minute.
- Add the ground bison and cook until browned, breaking it up with a spoon or meat chopper. Season with salt and pepper immediately. Then stir in chili powder, smoked paprika, cumin, oregano, and cayenne pepper. Cook for one minute until fragrant.
- Add the fire-roasted tomatoes, tomato sauce, broth, black beans, and kidney beans. Stir well to combine.
- Bring to a simmer, reduce heat to low, and cover. Let it cook for 20-30 minutes, stirring occasionally.
- In a small bowl, whisk masa harina with 1/2 cup water until smooth. Gradually stir the mixture into the chili. Cook for another 5-10 minutes to thicken.
- Add lime juice and season with additional salt and pepper or other seasonings if needed.
- Ladle the chili into bowls and garnish with fresh cilantro. Optional toppings: diced avocado, shredded cheese, and onion.
