Bison Chili

This hearty bison chili is rich, flavorful and thickened with masa harina for a subtle hint of corn that deepens the flavor. Made with whole ingredients and warm spices, it’s a nourishing, protein-packed meal perfect for cozy nights.


Ingredients

  • 1 lb ground bison
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 1 bell pepper, diced (any color)
  • 1 jalapeño, seeded and diced (optional, for heat)
  • 2 tbsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1/2 tsp oregano
  • 1/4 tsp cayenne pepper (optional)
  • 1 (14 oz) can fire-roasted diced tomatoes
  • 1 (8 oz) can tomato sauce
  • 1 cup beef bone broth
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (15 oz) can kidney beans, rinsed and drained
  • 1/4 cup masa harina (corn flour)
  • 1/2 cup water
  • Salt and pepper, to taste
  • Juice of 1 lime
Optional Toppings
  • Fresh cilantro
  • shredded cheese
  • diced onion
  • sour cream or thick Greek yogurt

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion, bell pepper, and jalapeño (if using). Sauté until softened, about 4-5 minutes. Add garlic and cook one more minute.
  2. Add the ground bison and cook until browned, breaking it up with a spoon or meat chopper. Season with salt and pepper immediately. Then stir in chili powder, smoked paprika, cumin, oregano, and cayenne pepper. Cook for one minute until fragrant.
  3. Add the fire-roasted tomatoes, tomato sauce, broth, black beans, and kidney beans. Stir well to combine.
  4. Bring to a simmer, reduce heat to low, and cover. Let it cook for 20-30 minutes, stirring occasionally.
  5. In a small bowl, whisk masa harina with 1/2 cup water until smooth. Gradually stir the mixture into the chili. Cook for another 5-10 minutes to thicken.
  6. Add lime juice and season with additional salt and pepper or other seasonings if needed.
  7. Ladle the chili into bowls and garnish with fresh cilantro. Optional toppings: diced avocado, shredded cheese, and onion.
