Sweet Italian Sausage and Roasted Tomato Pasta
A flavorful, gluten free dish made with caramelized roasted tomatoes, savory sausage and fresh herbs. It’s a simple yet comforting meal perfect for busy nights.
Ingredients
- 12 oz gluten-free pasta (or regular if preferred)
- 1 lb sweet Italian sausage
- 2 tbsp olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 10 oz cherry tomatoes, halved
- 1 cup baby spinach (or kale)
- ½ cup chicken bone broth (or reserved pasta water)
- 1 14.5 oz can fire roasted crushed tomatoes
- ½ tsp red pepper flakes (optional)
- ½ tsp dried oregano
- ¼ cup fresh basil, chopped
- Salt & pepper to taste
- ¼ cup grated Parmesan (or dairy-free alternative)
Instructions
- Preheat oven to 400°F. Toss cherry tomatoes with 1 tbsp olive oil, salt, and pepper. Roast for 15 minutes until soft and slightly caramelized.
- In a large skillet, heat 1 tbsp olive oil over medium heat. Add the Italian sausage, breaking it apart as it cooks. Once browned, remove from the pan and set aside.
- In the same pan, add the diced onion and cook until softened. Stir in garlic, red pepper flakes, and oregano, cooking for 1 more minute.
- Pour in crushed tomatoes and chicken broth, stirring to combine.
- Add roasted tomatoes and cooked sausage back to the pan. Simmer for 5 minutes.
- Boil pasta according to package instructions. Reserve ½ cup pasta water if needed. Drain and add pasta to the sauce, tossing to coat. Add spinach and let it wilt.
- Stir in fresh basil and adjust seasoning if needed. Serve with Parmesan and extra basil on top.
