Sweet Italian Sausage and Roasted Tomato Pasta

A flavorful, gluten free dish made with caramelized roasted tomatoes, savory sausage and fresh herbs. It’s a simple yet comforting meal perfect for busy nights.

Ingredients

  • 12 oz gluten-free pasta (or regular if preferred)
  • 1 lb sweet Italian sausage
  • 2 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 10 oz cherry tomatoes, halved
  • 1 cup baby spinach (or kale)
  • ½ cup chicken bone broth (or reserved pasta water)
  • 1 14.5 oz can fire roasted crushed tomatoes
  • ½ tsp red pepper flakes (optional)
  • ½ tsp dried oregano
  • ¼ cup fresh basil, chopped
  • Salt & pepper to taste
  • ¼ cup grated Parmesan (or dairy-free alternative)

Instructions

  1. Preheat oven to 400°F. Toss cherry tomatoes with 1 tbsp olive oil, salt, and pepper. Roast for 15 minutes until soft and slightly caramelized.
  2. In a large skillet, heat 1 tbsp olive oil over medium heat. Add the Italian sausage, breaking it apart as it cooks. Once browned, remove from the pan and set aside.
  3. In the same pan, add the diced onion and cook until softened. Stir in garlic, red pepper flakes, and oregano, cooking for 1 more minute.
  4. Pour in crushed tomatoes and chicken broth, stirring to combine.
  5. Add roasted tomatoes and cooked sausage back to the pan. Simmer for 5 minutes.
  6. Boil pasta according to package instructions. Reserve ½ cup pasta water if needed. Drain and add pasta to the sauce, tossing to coat. Add spinach and let it wilt.
  7. Stir in fresh basil and adjust seasoning if needed. Serve with Parmesan and extra basil on top.
