Miso Salmon and Bok Choy
An umami rich dish featuring tender, miso-glazed salmon paired with sauteed bok choy and fluffy white rice.
Ingredients
Sauce/Marinade
- 1/4 cup white miso paste
- 1/4 cup maple syrup
- 1/4 cup rice vinegar
- 2 tbsp liquid aminos
- 1 tbsp sesame oil
- 1 tbsp freshly grated ginger
Salmon and Bok Choy
- wild caught sockeye salmon fillets
- 1 head bok choy, chopped
- avocado oil
- green onion, sliced (white and green parts)
- prepared white rice
Instructions
- combine all sauce/marinade ingredients in a glass container. Reserve about 1/4 cup to use as a sauce. Use the rest to marinate the salmon.
- marinate the salmon for at least 30 minutes, then bake at 400° for 10 minutes.
- while salmon is baking, fry chopped bok choy in a pan with avocado oil until tender.
- serve salmon and bok choy on top of white rice. Top with green onions and remaining sauce
