Miso Salmon and Bok Choy

An umami rich dish featuring tender, miso-glazed salmon paired with sauteed bok choy and fluffy white rice.


Ingredients

Sauce/Marinade
  • 1/4 cup white miso paste
  • 1/4 cup maple syrup
  • 1/4 cup rice vinegar
  • 2 tbsp liquid aminos
  • 1 tbsp sesame oil
  • 1 tbsp freshly grated ginger
Salmon and Bok Choy
  • wild caught sockeye salmon fillets
  • 1 head bok choy, chopped
  • avocado oil
  • green onion, sliced (white and green parts)
  • prepared white rice

Instructions

  1. combine all sauce/marinade ingredients in a glass container. Reserve about 1/4 cup to use as a sauce. Use the rest to marinate the salmon.
  2. marinate the salmon for at least 30 minutes, then bake at 400° for 10 minutes.
  3. while salmon is baking, fry chopped bok choy in a pan with avocado oil until tender.
  4. serve salmon and bok choy on top of white rice. Top with green onions and remaining sauce
