Shrimp and Black Bean Tacos

These are fresh, zesty and full of flavor! Juicy shrimp, hearty black beans and vibrant toppings all wrapped in a gluten free corn tortilla and topped with a creamy sauce that has just enough kick!


Ingredients

Sauce
  • 1/2 cup plain Greek yogurt
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/4 tsp cayenne pepper
  • Salt/pepper to taste
  • juice of 1/2 lime
Shrimp and Beans
  • 1 pound shrimp, peeled and deveined (thawed and dried with paper towel)
  • 1/2 can black beans
  • 1 onion, chopped
  • Avocado oil
  • 1/4 tsp crushed red pepper flakes
  • 1/2 head of cilantro, chopped
  • Juice of 1.5 limes
  • 3 cloves garlic, minced
For Serving
  • Corn tortillas
  • Avocado
  • Chopped cilantro

Instructions

  1. combine all sauce ingredients in a small bowl and set aside
  2. drizzle a pan with avocado oil and cook chopped onion. When it starts to become translucent, add garlic and cook another minute.
  3. add shrimp and immediately season with salt and crushed red pepper. Add all of the lime juice and black beans.
  4. when shrimp is no longer pink, add chopped cilantro and stir in. Remove from heat.
  5. add shrimp mixture to a warmed corn tortilla and top with sauce, avocado and chopped cilantro
