One Pot Bison and Sweet Potato Skillet

This one pan meal is loaded with protein, fiber and warming spices. The sweet potato makes everything satiating without any grains and this all comes together in under 30 minutes.


Ingredients

  • 1 lb ground bison
  • 1 tbsp avocado oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 medium sweet potato, diced small
  • 1 bell pepper, diced
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • ½ tsp chili powder
  • ½ tsp salt (adjust to taste)
  • ¼ tsp black pepper
  • 1 (14.5 oz) can fire-roasted diced tomatoes
  • ½ cup broth (bone broth or vegetable broth)
  • 2 handfuls fresh spinach
  • avocado, sliced (for topping)
  • Fresh cilantro & lime wedges (for garnish)

Instructions

  1. Heat avocado oil in a large skillet over medium heat. Add the onion and sauté for 2-3 minutes until softened.
  2. Add the garlic and ground bison, breaking it up as it cooks. Brown for about 5 minutes.
  3. Stir in the sweet potato, bell pepper, cumin, smoked paprika, chili powder, salt, and black pepper. Cook for 2-3 minutes until fragrant.
  4. Pour in the fire-roasted tomatoes and broth. Stir, cover, and let simmer for 10-12 minutes, stirring occasionally, until the sweet potatoes are tender.
  5. Uncover and stir in the fresh spinach, letting it wilt for 1-2 minutes.
  6. Serve warm, topped with avocado, fresh cilantro, and a squeeze of lime.
