Springtime Turkey and White Bean Skillet
One pan, zero stress. Filled with protein and fiber, this meal will leave you feeling full and satisfied. Fresh veggies and turkey with creamy goat cheese over the top!
Ingredients
- 1 lb ground turkey
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp thyme
- ½ tsp smoked paprika
- ½ tsp salt
- ¼ tsp black pepper
- 1 can (15 oz) white beans, drained and rinsed
- 1 small zucchini, diced
- 1 cup cherry tomatoes, halved
- 2 handfuls baby spinach
- ½ cup broth (bone broth or vegetable broth)
- Juice of ½ lemon
- ¼ cup crumbled goat cheese (optional)
- Fresh basil or parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Add onion and cook for 2-3 minutes until softened. Stir in garlic, thyme, smoked paprika, salt, and pepper.
- Add ground turkey and break it up as it browns, cooking for about 5-6 minutes until fully cooked.
- Stir in zucchini, cherry tomatoes, and white beans. Pour in the broth and let simmer for 5 minutes until the veggies soften slightly.
- Stir in the spinach and lemon juice, letting the spinach wilt for about 1 minute.
- Top with crumbled goat cheese (if using) and fresh basil or parsley.
