Chicken Stir Fry
This is the most healthy and delicious stir fry made with a paleo approved sauce! The perfect meal with maximum protein and fiber. Better than takeout, you’ll want this on repeat.
Ingredients
- Cooked white rice or cauliflower rice for Whole30
For the Chicken and Marinade
- 1 lb chicken breast, cut into bite-sized pieces
- ½ cup liquid or coconut aminos
- 1 tbsp chili sauce or sriracha
- 2 tbsp honey
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
Veggies
- 1 head broccoli, cut into bite-sized florets
- 1 red or orange bell pepper, thinly sliced
- 1 cup shredded carrots
- 1 package sugar snap peas
Instructions
- Make the Sauce: In a bowl, whisk together liquid aminos, chili sauce or sriracha, honey (if using), garlic, and ginger.
- Marinate the Chicken: Add chicken to a shallow dish or bag. Pour in half of the sauce and marinate for at least 30 minutes (longer if you can). Set the remaining sauce aside.
- Cook the Chicken & Veggies: Heat a large skillet over medium heat. Add the marinated chicken, broccoli, and bell pepper. Cook for about 6–8 minutes, until the chicken is mostly cooked through.
- Add the remaining sauce, sugar snap peas, and shredded carrots. Stir and cook for another 4–5 minutes, until veggies are tender and the sauce thickens slightly.
- Serve: Spoon over rice or cauliflower rice and garnish with green onions or sesame seeds if desired.
